2 Brioche buns
240g King prawns
1 Red chilli
2 Spring onions
Pick half a bunch of coriander on a chopping board add two sliced spring onions. Add the king prawns and roughly chop all together until you have minced prawns season with a pinch of sea salt split the mixture into two equal parts and form into patties.
Place the burgers into a non stick frying pan and cook for 2-3 minutes on each side while they are cooking slice the burger buns in half and toast until golden then move onto the lime mayonnaise.
In a small bowl grate zest of 1 lime and squeeze the juice of half the lime to that add two tablespoons of mayonnaise, few cracks of black pepper and a pinch of salt.
cover the buns with the lime mayo pop the gorgeous cooked through prawn patties on the buns cover with mayo and a handful of rocket and a few sliced fresh chillies.
Eat by themselves or add a fresh potato salad or sweet potato fries
