This recipe has been knocking around my head for a while now but finally the sun seems to be showing its face so nows a better time than any to share this post with you guys. Its pretty simple almost only three components apart from the dressing super zingy spicy and clean.
You’ll need…. ‘Serves two’
400g Rice noodles ‘fresh or dried’
200g White crab meat or a 50/50 mix if you love dark crab meat
Index finger sized Cucumber ‘deseeded’
For the dressing
3 Tbsp Rice wine vinegar
1 Tbsp Soy sauce
2 Tbsp runny Honey
2 Tbsp Lemon juice
Large pinch of sea salt
Large crack of pepper
1 Small Shallot ‘ Finely sliced’
Thumb of Ginger ‘Finely grated’
Thumb of Galangal ‘Finely grated’
Handful of Coriander ‘Finely chopped’
Handful of Parsley ‘finely chopped’
1 Half of a red chilli ‘Deseeded and finely sliced’
Now it doesn’t really get any easier than this now does it! Simply pop the noodles into boiling salted water and cook for two minutes. Drain and soak in ice cold water for a further two minutes then drain, Please make sure drain the noodles really well even press them down in the colander or the dish will really lack in flavour as the water will dilute the dressing.
In a bowl add all your dressing ingredients and then the noodles, herbs and fresh crab. Mix well, check seasoning and either store overnight for an even more intense flavour or serve and eat straight away.
