6 medium sized potatoes
6 rashers streaky smoked bacon
Handful of chopped chives
truffle oil & or fresh truffles
Cut the potatoes length ways into wedges pop into a pan with cold water and rinse. Now to parboil the potatoes fill the pan back up with fresh cold water. Season the with plenty of salt and bring potatoes up to the boil simmer for 20 minutes then drain and let cool and dry for 5 minutes.
In bowl add a good slug of olive oil and healthy pinch of sea salt coat all the wedges and place on a parchment lined tray along with the streaky bacon.
Place in the oven at 200c and roast for 20-25 minutes until golden a crisp.
While hot add the bacon and wedges to a bowl and cover in grated parmesan, Fresh chopped chives, Sea salt and truffle oil ‘If you’re feeling extra fancy you could slice fresh truffle over the wedges too’
