240g Chickpeas ‘Drained’
1 Cooked beetroot
2 Garlic cloves ‘Crushed’
2 Tbs Tahini
Juice of one lemon
Large pinch salt
1 whole onion ‘Chopped’
3 garlic cloves ‘Crushed’
1 heaped tsp Chilli flakes
1 heaped tsp Ground cumin seeds
500g lamb mince
1 large handful chopped Parsley
1 large pinch of sea salt
2 Large aubergines ‘1inch thick slices’
Minted yogurt dip
1 Bunch fresh mint
300ml Greek yogurt
Juice of half a lemon juice
Pinch of sea salt
These super healthy bun free burgers will really get your tastebuds going. To start fire up the grill to get it ready for the lamb burgers and aubergine.
In a bowl place the lamb mince add to that the following ingredients once cooked and browned in a pan,
one finely chopped onion, One heaped tsp chilli flakes, One heaped tsp ground cumin, Three cloves crushed or chopped garlic, One large handful chopped parsley a mix it all together with your hands being sure to bind all the ingredients nicely.
Form the lamb into extra large golf ball sized burgers and leave in the fridge while you prepare the aubergine.
For the aubergine simply slice into one inch thick slices and season with olive oil, Salt & Pepper.
If this recipe couldn’t get any simpler lets move on to the hummus. So for this all you need to do is whack all the ingredients into a blende/Food processor and whizz away the have a taste to check if the seasoning is up to scratch pop it in a serving bowl and enjoy.
Now pop the lamb burgers and the aubergine onto the grill and grill the burgers for two minutes. Remove the burgers and let rest for a further two minutes while the aubergine carry’s on grilling and while making a quick and easy minted yogurt.
Start by roughly chopping the fresh picked bunch of mint with a large pinch of sea salt until you get more of a mint paste. Add the mint to a bowl of greek yogurt, Squeeze the juice of half a lemon and give it all a good mix up.
To serve I built up the burgers and dolloped the minted yogurt on top while popping the hummus on the side of the plate to dip either the burgers or the shop bought flat bread or if your feeling a little more adventurous you could always make your own.
