2 large salmon fillets ‘Skinless’
240g Brown rice or whole grain
240g Black eyed peas
1 Large Lime ‘Zest and juice’
Large handful coriander
One of my go to quick and healthy meals while still being incredibly tasty. Start by rinsing the rice to remove any dust and excess starch, Add to a pot double the ratio of water to rice season with a healthy pinch of salt cover and bring to the boil then turn down to a simmer until cooked and fluffy.
While the rice is cooking rub and cover the salmon fillets in the jerk seasoning and let marinade for a few minutes. Place the salmon on a tray lined with parchment paper and a little coconut oil. Pop the Salmon into a pre heated oven at 200c cook the salmon for 12 minutes.
Add the pre cooked peas to the rice and a large handful of picked coriander and stir all together.
Serve with a wedge of lime
