1 Chicken breast ‘Around 100g and flattened’
1 Tomato ‘sliced’
1 Egg ‘Poached’
2 slices of thick seeded bread ‘Toasted’
100g Spinach ‘Wilted’
45g Hard goats cheese ‘St.Hellans farm’
1tbs Greek yogurt
1tsp Dijon Mustard
Salt & pepper
I absolutely adore this sandwich. Its healthy while being packed full of protein and so much flavour, This will set you right till dinner time no problem!
First off flatten the breast of chicken with a rolling pin or something heavy in between a sheet of parchment paper. Season heavily with pepper and a pinch of salt. Heat a pan to a medium high heat add a teaspoon of coconut oil, Fry both side of the chicken for two minutes each side. In the same pan remove the chicken and add the spinach for thirty seconds until wilted.
Slice the tomato. Mix the greek yogurt and dijon together and spread over the toasted bread slice. Poach an egg then build up your sandwich with the rest of your ingredients goats cheese etc, Its as easy as that.
