200g Sweet potato ‘steamed’
200g Eggs ‘roughly 3 large eggs’
1/2 tsp Cinnamon
Tbsp Manuka honey
1 Nectarine ‘Sliced’
Pistachios ‘Toast for extra flavour’
Zest of Lime
These nutrient filled pancakes are perfect for adding a little zing to your morning.
Start by cutting 200g peeled sweet potato into small pieces, Steam for ten minutes or until soft. Now mash or blend the potato add 3 eggs, Honey and cinnamon and bind together until you get a nice liquid mixture.
Pour onto a lightly coconut oiled pan and cook for one minute each side. You should get about six to eight pancakes give or take.
Top with any fruit you’ve got in the kitchen and enjoy feeling extra naughty why not add a couple slices of bacon to your pancakes!
