80g Muscavado sugar
Juice of half a lemon
pinch of salt
75g coconut flour
75g coconut sugar
75g Rolled oats
1 Egg yolk
Pinch of salt
Start by peeling and coring the apples, Then cutting apples and rhubarb into similar sized chunks mix together in a bowl with all other ‘fruit’ ingredients leave to one side and prepare the crumble mix.
Now mix all crumble ingredients into a bowl and mix with your hands until you get a nice sticky crumble texture. Evenly rub a baking dish with butter, Add fruit mix then cover with crumble mix. Preheat oven at around 170c to 190 and bake for 25 to 35 minutes or until the crumble is toasty and golden while the fruit is gooey and sweet.
Serve with greek yogurt or some delicious vanilla ice cream.
