80g Red split lentils
1 Shallot finely chopped
2 Peeled tomatoes chopped
1 Chili finely sliced
1 Garlic clove minced
1 tsp Garam masala
1 tsp coriander seeds
1 Tbls Coconut oil
2 cups water
large knob of butter
1 poached egg
Place the lentils in a pan and cover with 2 cups of cold water. Bring to the boil, and then reduce to a simmer. Add the butter cover with a lid or piece pf parchment and cook gently.
In a separate pan heat coconut oil and fry the chopped shallot, garlic, chillies and tomatoes. Cook for a few minutes then add the garam masala and coriander seeds.
Now add all the fried ingredients to the lentils and stir until nicely incorporated, season with little sea salt.
Serve with a poached egg or with some homemade roti’s.
