For the braised corn
2 Corn cobs shucked
1 Garlic clove
1 Lime ‘zest and juice’
1/2 Red chilli
For the tofu
1 tbls cayenne pepper
1 tbls sesame seeds
1 tbls coconut oil
Pinch of salt
To start heat coconut oil in a non-stick pan add the cubed tofu, Colour tofu for a few minutes until light brown. add the sesame seeds, cayenne and pinch of salt. Reduce heat, cook until sesame seeds turn golden now remove the tofu from the pan into a bowl.
Wipe the same pan clean, add coconut oil, shallot and garlic cook on a low heat for around 5 minutes. add the freshly shucked corn add 1 cup of vegetable stock or water and braise corn for a further 5 minutes.
Now add tofu to the corn stir for a minute so the tofu picks up the flavours of the braised corn. Thinly slice half a chili, pick a few coriander leaves and serve.
