For the dough
500g spelt flour
320ml warm water
7g fast acting dried yeast
Pinch of sea salt
For the topping
1 ladle of Passatta
1 sprig of picked thyme
25g of cooked clams
1/2 of one red chilli
1 tbsp goats cheese
A few coriander leaves
Place the spelt flour into a large mixing bowl. Add the water, Yeast and a large pinch of sea salt. Mix everything together untill you get a soft dough.
Flour a work surface, pop the dough on the surface and knead ‘or you can use a kitchen aid with a dough hook’ untill it’s smooth a elastic in texture. Continue kneading for around 5 to 10 minutes.
Place the dough back in the bowl, Cover with a damp tea towel or cling film and leave in a warm place for at least 30 minutes to an hour.
Portion the dough into four quarters ‘four large pizza’s’ you can freeze the rest for another time.
Add my suggested toppings or any toppings you feel in the mood for, place onto a pizza tray or baking dish. Preheat oven to 220• and bake for 8min for a perferct crust.
