175g king prawns
Large handful of sunflower seeds
1 half red chilli
1 corn cob
1 half shallot onion
Juice half lime
Few coriander leaves
Steam the broccoli & corn, then with a stove flame or blow torch charr the corn and shuck.
In a hot pan with a teaspoon of coconut oil add the prawns then the chilli and a pinch of salt. Cook untill lightly brown and place in a bowl to cool slightly.
Wipe the same pan clean and toast a handful of sunflower seeds until golden.
Thinly slice half a shallot.
Add all ingredients to a bowl drizzle them with olive oil, squeeze half a lime and season with salt and pepper.
Plate and serve with a few coriander leaves
